Light and fluffy, icing not too sweet or too thick. This cake is unbelievably delicious, people that eat gluten could not tell that it did not have gluten. Fantastic to cater for people with gluten intolerance.

I know that there were public holidays involved but I ordered this cake for collection on Tuesday 29th April way ahead of time. The sponge was stale and we ended up leaving it for the cleaning staff. When I placed my order on the Friday I received a call from a young girl and we discussed that it woukd only be made on the Monday. The cake we received was definitely a few days old. So sorry but it's really important that 'special requests' be adhered to - especially a birthday cake.
